Good Friday Morning fellow bloggers and I really did mean Happy Friday b/c I just realized it is Good Friday 🙂 I am just happy to still hanging be hanging in there w/the AtoZ Challenge. Didn’t have a great editorial calendar for this year’s challenge but I figure I get a pass b/c I am just trying to get my site back up an running.

Today’s letter is ‘L’ so I’m going to go with that … I know it’s really ‘M’ but I’ll get to that but first let’s do ‘L’ …

Welcome Blogger’s to Scarlett’s Secret Recipe Vault i.e. the AtoZ Blogging Challenge 😉

Below is my go to recipe for all of my frosting:

This is my go to recipe for all of my (f)rosting. I use pretty much the same recipe for all of my frosting… Then will flavor it with whatever works for the recipe. Sometimes strawberries … My fresh strawberry buttercream is to die for … It’s a keeper. That is a bit more complicated. I make a strawberry puree w/fresh strawberries…Delish <3

Easy Vanilla Buttercream (F)rosting

Ingredients

1/2 Cup of butter, softened

4 1/2 Cups confectioner’s sugar

1-1/2 tsps. vanilla extract

5/6 Tbl. 2 percent milk

Last but not least my Fruit Topped Almond Cream….

Scarlet’s Enchiladas

Ingredients

Brown 1 lb. Ground Beef, drain/ set aside…

8 Flour Enchiladas (Keep Warm/Set aside)

1/2 Cup Sour Cream

1 Cup Shredded Cheddar Cheese (Resv. 1/2 Cup)

2 Tbl.Chopped Parsley

1 tsp.salt 1/4 tsp.pepper

Stir in remaining ingredients except flour enchiladas, cover and reserve.

In a separate pan, mix together

15 oz. Can of Tomatoe Sauce, 2/3 Cup of water, 1/3 Cup of Chopped Green Pepper, 1 Tbl. Chili Powder, 1/2 tsp. oregano, 1/4 tsp. Cumin, 1 Clove of Garlic ( Double the sauce for more juice)…

Heat above ingredients to boiling, stirring occasionally; reduce heat. Simmer uncovered 5 minutes. Pour Enchiladas Sauce into a pie plate (9″) . Dip each tortilla into the sauce to coat both side. Spoon about 1/4 C. of hamburger mixture into each tortilla; roll tortilla up around filling. Arrange beef enchiladas into a greased 13 x 9 x 2 ” baking dish. Pour remaining sauce over enchiladas. Cook uncovered in a 350 degree oven until bubbly (20 min). Garnish with reserved/shredded cheddar cheese and sour cream…

I’m a couple of days late…But it’s better late, well you know 🙂 Long story short, I kind of crashed my my site so I’m feeling a bit wonky. Then my IT guy is not available when I thought he would be and I guess I’m going to have to figure this out, sooooo stay tuned. It out to be fun 😉

Today is the beginning of a challenge that I started way back when I first started blogging. Looking around for all of my deleted widgets OMG. I’m just trying to find everything. Then I guess I have a different site that keeps popping up and that’s not even the site that I blog on. What do I do to change it back.

I digress, sorry. Back to AtoZ. Today I am going to start on Scarlet’s Family Recipe’s (from the family vault 😉 ) …

Apple Mixture

  • 1/4 cup margarine or butter 
  • 1 1/2 cups thinly sliced, peeled apples 
  • 1/2 cup sugar 
  • 1/2 teaspoon cinnamon 
  • 1/4 teaspoon nutmeg 

Pancake

  • 1 cup Complete Pancake & Waffle Mix (Just Add Water) 
  • 1/2 teaspoon cinnamon 
  • 1/4 teaspoon nutmeg 
  • 3/4 cup water 
  • 1 teaspoon vanilla 

Topping

  • 1 tablespoon sugar 
  • 1/4 teaspoon cinnamon 

Steps

  • 1MICROWAVE DIRECTIONS: In 9-inch microwave-safe pie pan or round cake pan, microwave margarine on HIGH for 30 to 45 seconds or until margarine is melted. Stir in all remaining apple mixture ingredients. Cover; microwave on HIGH for 3 to 4 minutes or until apples are tender.
  • 2In medium bowl, combine all pancake ingredients; blend well. Pour batter evenly over cooked apples. In small bowl, combine topping ingredients; sprinkle over batter.
  • 3Microwave on HIGH for 3 to 5 minutes or until toothpick inserted 1 1/2 to 2 inches from edge comes out clean. Let stand 5 minutes on flat surface. Invert onto serving plate. Cut into wedges to serve.
  • 41. CONVENTIONAL DIRECTIONS: Heat oven to 350°F. In 9-inch pie pan or round cake pan, melt margarine in oven. Stir in all remaining apple mixture ingredients. Bake at 350°F. for 10 minutes. 2. In medium bowl, combine all pancake ingredients; blend well. Pour batter evenly over cooked apples. In small bowl, combine topping ingredients; sprinkle over batter. 3. Bake at 350°F. for an additional 15 to 20 minutes or until toothpick inserted in center comes out clean. Let stand 2 minutes. Invert onto serving plate. Cut into wedges to serve.

Good Tuesday, Blogger’s

I guess I’ll be starting from scratch but at least I’m starting !! I’d hoped to have my blog’s new look up and running but not so much. I just have to get busy with AtoZ as we are already on the letter ” D ” OMG…

I started this blog with the idea of writing my cookbook. I am still moving in that direction and AtoZ will keep me focused. I am doing R E C I P E S from the family vault…Not really, but family favorites from Scarlett79.

I’m just going to start with the letter ” C “…Below is my recipe for “Chicken Tortilla Soup.” It is a basic recipe and you can add pretty much anything you want to make it your own. This recipe proved to be a good one for Sunday Afternoon’s with a houseful of guest watching a sporting event. Makes for good leftovers for the week too 😉 ..
