Good morning or afternoon I should say. Running a little behind schedule as the husband is home on vaca this week so I’m stepping over him but it’s going to be nice to have someone to pal around with all week. Going to have a fun week, out to the cemetery (that’s always uplifting) then we’ll try to get out to see Dr. Scott to finish my root canal (need something to look forward to that’s better than the cemetery 🙂 ) and maybe then we’ll try to fit in some really fun stuff. Me and the husband were talking this weekend and we have decided that we aren’t really that exciting of a couple. One thing for sure though, we still love each other to pieces after all these years and we still laugh at the world, so I guess that’s something ❤ Now let’s get to my recipe/cooking for the week.
Today I’m going to be cooking my Sour Cream Noodle Bake. I use the term, “My,” loosely b/c it’s really from The Pioneer Woman. I just tweek the recipe a little bit to make it, “My Own.” She’s a great cook and when ever I need some fresh ideas, she’s my go to gal ever since Mr. Food disappeared. So let’s get started.
This is a trick of mine. Whenever I cook pasta and I don’t want the water to boil over, I put a spoon on top of the pan. It stops the water from boiling over. Make sure you stay in the kitchen with the open flame. IDK for sure, but I think maybe that spoon could catch on fire and I’m pretty sure that would ruin your dinner 🙂 …
2. After the noodles are cooked and drained I coat them with about a 1/4 C. of butter, because everything is better with butter. Hey I have the Wisconsin DNA in me for real, it’s not my fault (in other words you don’t have to use the butter). Then I take about 1/2 C. of sour cream and 1 1/4 C. of cottage cheese, pepper this good, and put it on the hot noodles. This is where I start eating supper b/c I only have so much will power when it comes to this recipe.
3. Now is where you start to put it together. I used a square baking dish. I put a layer down of the noodle mixture, then a layer of the ground beef and top that layer off with some cheddar cheese, repeat. I only had two layer’s because it’s just me and the husband, but I bet you could double this recipe without a problem…
That’s it. Bake in a 350 degree oven for 20 minutes or until the cheese melts and then it’s done and yum. You could add a cute little side salad w/cheesy garlic bread. B O O M dinner with leftover’s as far as the eye can see 😉
