Corned Beef/Crock Pot and Vegetables

1 boneless corned beef brisket (3 to 4 pounds) with seasoning packet
4 ribs celery, cut into large chunks
2 medium onions, cut into quarters
1 cup water
1 1/2 cups chicken stock
1 bottle (12 ounces) beer

Place celery and onions in the bottom of a slow cooker. Top with corned beef brisket. Sprinkle contents of seasoning packet over brisket. Add water, chicken stock, and beer. Cover and cook on low 8 to 10 hours, or until brisket is fork-tender. Serve with boiled or roasted potatoes, carrots and cabbage.

You can also add potatoes, cabbage and carrots to the slow cooker the last 2 hours of cooking.

Beer Bread

3 cups self-rising flour
1/4 cup sugar
1 bottle (12 ounces) beer
1/2 cup melted butter

Preheat the oven to 375 degrees. Spray a loaf pan with cooking spray. In a large bowl, combine the flour, sugar and beer. The batter should be really lumpy – do not over mix it! Spoon it into the loaf pan and pour the butter on top. Bake for about 45 minutes or until it gets all golden brown.

Pistachio Salad

1 3oz. Box Pistachio Instant Pudding
1 small can crushed pineapple
1 small container of Cool Whip
Small Marshmallows

Combine pudding and crushed pineapple until they are well blended. You will be able to tell. Add cool whip and pudding mixture, blend well. Add marshmallows. Refrigerate
